Rosario has the odd habit of turning its back on the river at dinner time. Bar Ensayo does the opposite, and that alone earns the trip: half the menu is river fish, not as a concession to tourists but as the thing they are proud of.
What we ordered
We started with surubí croquettes, crisp outside and still juicy inside. Then the house plate: grilled boga with brown butter and capers. The skin came out properly seared, the flesh lifted clean off the bone. That does not happen by accident.
For dessert, a dulce de leche flan that was not made in-house, and it showed. The only weak note of the night.
The small thing that counts
The bread arrives hot and they replace it without being asked. It sounds trivial. It is not.
The service
Staff who actually know the menu: they told us the boga was big enough for two and adjusted our order. A restaurant that sells you less when it should is a restaurant that wants you back.
Sit outside if you can. The indoor room is louder than it looks.
What does not work
The wine list is built from what is available, not from what pairs: heavy malbecs and almost no white to go with fish. And they do not take cards on Tuesdays, which is posted nowhere.
Is it worth it?
Yes, especially if you are visiting. It is the kind of place that makes a city easier to understand.
